I love places where you can watch your dish being prepared. This helps to appreciate how much skill and work it requires.
Pizzerias nowadays are so common, it is easy to miss, that preparing a great pizza is not an easy feat.
It requires proper, wood-fired, pizza oven, quality dough, and perfectly selected ingredients. And finally, you need a proficient pizzaiolo to put all of this to good use. And if your pizzaiolo is in the mood for a little show, making pizza can be a lot of fun, too!
